Anda Hyderabadi

Anda Hyderabadi is a delicious dish prepared with very simple and minimum ingredients. Eggs in green masala paste taste awesome with ghee rice, naan, or rotis. You can substitute eggs with mushrooms, paneer, baby potatoes, chicken or prawns.






Ingredients

4 hard-boiled eggs

3 tsp oil

1 tsp jeera/ cumin seeds

2 lavang / cloves

1/2 inch dalchini/ cinnamon stick

1/2 tsp turmeric/ haldi powder

1 tsp red chilli powder

1/2 tsp coriander / dhaniya powder

1/2 tsp jeera / cumin powder

1 tsp garam masala powder

1 tsp kasuri methi / dried fenugreek leaves


For the masala paste:

2 tsp oil

2 roughly chopped onions

2 green chillies

5 garlic cloves

1-inch ginger piece

Handful of coriander / Dhaniya leaves

8 to 10 mint/pudina leaves

2 to 3 tbsp curd



Procedure

  • Peel the boiled eggs, make cuts on them, and keep them aside.

  • In a pan heat 2 tsp oil, put chopped onions, garlic cloves, ginger and chopped green chillies.

  • Fry them till the onions turn transparent. Once it comes to room temperature, grind it into a smooth paste along with mint leaves, coriander leaves and curd.

  • Keep the paste aside. Heat 3 tsp oil, put jeera, lavang and dalchini. Fry them for a second.

  • Add the onion paste and roast it for 3 to 4 minutes. Add in all the spice powders one by one and fry for a minute.

  • Add half a cup of water, salt to taste and boiled eggs.

  • Give a good mix and let it boil for 5 minutes.

  • Add kasuri methi and mix well. turn off the flame and serve hot with ghee rice or naan.
