Vada Pav Chutney / Dry Garlic Chutney


This is a dry textured chutney prepared from garlic, ground nuts and spices and must-have condiment for making delicious vada pav. This chutney is so widely used in Maharashtra for making vada pavs that it’s commonly referred to as vada pav chutney. You can also enjoy this with dosa, idli or Paratha.








Ingredients

1/2 cup dry coconut gratings

3 tbsp peanuts

2 tbsp white sesame seeds/Til

1 tsp cumin seeds/ jeera

8-10 garlic cloves

2-3 tsp red chilli powder or to taste

Salt to taste




Procedure


  • Heat one pan and roast coconut gratings, peanuts,sesame seeds, jeera and garlic cloves, separately on a medium flame, till it turns light brown.

  • Let the roasted ingredients cool. Blend the roasted ingredients with salt and red chilli powder.

  • Make a slightly coarse powder.

  • Store in an airtight container and use with vada pav. dosa, idli or parathas.
