Ambya gojju

Ambo in Konkani means Mango. Ambya gojju means a sweet and spicy dish prepared with ripe mangoes. This is a typical GSB Konkani side dish. This dish is a mixture of sweet, sour, and spicy. If you are a mango lover, then you will love this dish. Traditionally, mangoes used to prepare this gojju are the local varieties of mangoes. Mangoes called KAAT AMBO in Konkani. These are also called UPKARI AMBO OR GONTA.






INGREDIENTS:

4 ripe mangoes

2 green chillies

Salt to taste

Sugar or jaggery as per taste.


For the tempering:

2 tsp oil

1 tsp mustard

Few curry leaves.


PROCEDURE:

  • Wash and peel the mangoes. Slightly crush the peeled mangoes with your hands and transfer to a bowl

  • Put the peels of the mangoes in a bowl, add 2 cups of water, and squeeze out all the pulp from the peels.

  • Add this to the mangoes. Crush the green chillies and add to the mangoes.

  • Add salt and sugar or jaggery to it and mix well.

  • Temper with the ingredients mentioned above and serve chilled.
