
Ingredients
250 gms bhindi / lady's finger/ okra
4 tsp oil + oil for deep frying
1tsp jeera/ cumin seeds
1 finely chopped onion
1 tsp ginger garlic paste
1/2 tsp turmeric powder
1 tsp red chilli powder
1 tsp garam masala powder
1 slit green chilli
1 finely chopped tomato
1/2 cup fresh curds
Salt to taste
Chopped coriander leaves
1 tp Kasuri methi
for the masala paste:
2 tblsp grated fresh coconut
6 cashew nuts
Make a fine paste and keep aside
Procedure
Wash the bhindis under the running water, dry it on a kitchen towel
Trim the ends and cut into 1-inch pieces, mix with a little salt and deep fry until it is cooked
In a pan heat oil, add jeera, once it starts crackling, add green chilli and chopped onions
Saute onions until transparent, add ginger garlic paste and fry for 2 mins
Add chopped tomatoes and cook till it becomes mushy
Now put the spice powders and saute for seconds followed by curds and ground masala
Fry well for 5 mins, add salt and deep-fried bhindis with 1/2 cup water
Give a boil, add Kasuri methi, chopped coriander leaves and mix well
Serve with roti or naan.
