Chittye Panna Phodi

Chittye paan/ Spotted taro leaf plant/Colocasia Esculenta grows wild all over the Konkan and Kerala coasts as well as on the Western Ghats. The magnificent green leaves adorned with red patches and white dote are a feast to one's eyes. These fritters taste wonderful with rice and dal.



Ingredients


1/2 cup Rice flour

1/2 cup roasted Urad Dal powder

6 tsp Chilli powder

1 tsp Hing ( Assafoetida )

Salt to Taste

Colocasia Leaves (spotted)




Procedure


  • Mix all the ingredients (except the leaves) with water and make a thick paste.

  • Apply this paste over a leaf, then place one more leaf over this and apply the paste over it.

  • Continue this process with 8-10 leaves.

  • Now fold the sides of these layers of leaves and roll them tightly into a log.

  • Cut the log into small pieces.

  • Roll these in rice flour and deep fry them.

  • Keeping the roll/ Log in the deep freezer for one hour helps to cut the pieces neatly.
