Leftover rice dosa

This dosa recipe is a great way to repurpose leftover cooked rice into a delicious breakfast or snack. Super soft and porous dosa tastes awesome with chutney , kurma or sambar.

INGREDIENTS :

2.5 cups of dosa rice

1 cup coconut gratings

3/4 cup leftover cooked rice

1 tsp methi/ fenugreek seeds

Salt to taste

1/2 tsp cooking soda

Oil for cooking dosa


PROCEDURE:

  • Take dosa rice in a bowl and wash well. Soak the rice with methi seeds in enough water for 4 to 5 hrs.

  • Drain the water from the soaked rice and grind it with coconut gratings and cooked rice.

  • Make a smooth batter and let it ferment for 7 to 8 hrs or overnight.

  • Before making dosa, add salt and cooking soda, and mix well.

  • Heat the dosa pan and make a thick dosa, adding a teaspoon of oil, cover with a lid, and let it cook on a medium flame.

  • Once the dosa is cooked, serve hot with chutney, sambar, or any other spicy side dish. No need to flip the dosa.
