Gajar ka Halva / Carrot Halva

Gajar ka halwa, also known as Gajrela, Gajar Pak, and carrot halwa is a carrot-based sweet dessert pudding from the Indian subcontinent. It is made by placing grated carrots in a pot containing a specific amount of milk, and sugar, cardamom, and then cooking while stirring regularly.




Ingredients


5-6 carrots (Red-colored long variety carrots)

1 cup boiled milk

1 cup sugar

1 tsp cardamom powder / elaichi

5-6 tsp ghee

1/4 cup nuts

2 tsp raisins

2 tsp slivered almonds



Procedure

  • Wash the carrots and trim the ends. Grate them using a grater.

  • In a cooker put 2 tsp ghee, roast the nuts and keep them aside.

  • Put the grated carrots in the cooker, add milk and close the lid of the cooker. Cook it for one whistle.

  • Once the steam is released open the cooker and add the sugar. Cook it stirring continuously for about 15 to 20 minutes. Add the remaining ghee and cook further for 10 minutes or till it becomes semi-dry.

  • Add cardamom powder, raisins, and roasted nuts and mix well.

  • Garnish with slivered almonds and serve hot. You can also serve it with vanilla ice-cream.
