Ingredients
For the rice:
1 1/2 cup basmati rice washed and soaked in water for15 mins
1 cardamom
2 bay leaves
2 cloves
1/2 inch cinnamon
6 mint leaves
Salt to taste
4 cups water
Boil the water and put the soaked rice,salt and spices in it and cook the rice till it is cooked only 75%
Drain all the water and put in a strainer and cool it
For the vegetable gravy:
4 tblsp ghee or oil
1 +2 onions sliced
1 tsp ginger garlic paste
2 slit green chillies
1/2 tsp turmeric pdr
1 tsp red chilli pdr
1 tsp biryani masala
1 tsp lime juice
1/2 cup cauliflower florets
chopped carrot,beans ,potato and fresh green peas altogether 1 cup
1/2cup curd
Salt to taste
For garnishing:
1/4 cup chopped coriander leaves and mint leaves
some cashew nuts roasted in ghee
5-6 saffron strands soaked in 2 tblsp milk(you can also use saffron colour)
Procedure
In a pan heat oil or ghee and fry the sliced one onion till dark brown and keep aside
In the same ghee put the remaining onion slices and saute till transparent
Add ginger-garlic paste, green chillies and fry for 3-4 mins
Put the veggies and cook with a lid covered
Add salt to taste, all spice powders, lime juice and mix well
Now add the curd and mix well
Now take one microwave-safe bowl and put some prepared rice and spread it
Put some vegetable gravy, chopped coriander and mint leaves and fried onion slices on it and repeat the same with the remaining rice and the gravy
Finally garnish with the chopped coriander and mint leaves, fried nuts and saffron soaked in milk
Micro in MW for 3-4mins or keep in preheated OTG for 10 - 15 mins
Serve hot with any raita.
