Punugulu

Punugulu is a quick evening snack from Andhra Cuisine made with urad dal and rice batter. This is common street food in the coastal regions of Andhra Pradesh. These are a crispy deep-fried snack that is eaten with spicy chutney. You can also prepare these using idli or dosa batter.





Ingredients


1 cup idli batter

3 tbsp rice flour

3 chopped green chillies

1 finely chopped onion

2 tsp cumin seeds

Salt to taste

Chopped curry leaves

Oil for frying




Procedure


  • Pour the idli batter into a bowl, add rice flour and mix well

  • Add chopped onion, green chillies, curry leaves, cumin seeds and salt (only if needed, as the batter has already in it)

  • Heat oil in a Kadai, when it is hot enough gently drop 4-5 dumplings out of the batter using a spoon or wet hands

  • When the dumplings are cooked, turn them and fry till they turn into crisp and golden brown fritters

  • Serve hot with coconut chutney

  • To make chutney, grind coconut, green chillies, coriander leaves, roasted gram (daliya dal), salt, and tamarind into a smooth paste.
