Ingredients
5 small variety brinjals/baingan
1 capsicum
1 potato
1 chopped tomato
Salt to taste
chopped coriander leaves
For the masala :
2 tblsp coriander powder
1 tblsp cumin/jeera powder
1 tsp amchur or tamarind juice
1/2 tsp garam masala powder
1 tsp sambar powder
1/2 tsp turmeric powder
5 crushed green chillies
Dry roast 3 tblsp peanuts and 2 tblsp white sesame seeds and make powder
2 tblsp chopped coriander leaves
Pinch of sugar
Salt to taste
Mix all the above ingredients with little water and make a thick paste and this is the stuffing for brinjals
For the tempering:
5 tsp oil
1 tsp mustard
1 sprig of curry leaves
Procedure
Wash and slit the brinjal and keep in water
Peel the potato and cut into big pieces and cut the capsicum into big chunks
Stuff the brinjals with the masala paste
In a cooker put the oil, add the tempering ingredients one by one, Once it is ready to add chopped tomato and fry for 5 mins
Add the stuffed brinjals, potato and capsicum cubes, salt, sugar 1/2 cup water and close the lid
Cook for one whistle and your bharwa baingan is ready
Open the lid of the cooker, garnish with chopped coriander leaves and mix well
Serve hot with any rotis.
