Mamidikaya Thokku / Raw mango pickle

This is a very popular Andhra-style tangy and sweet condiment perfect for adding flavor to meals. You can also have this with roti, paratha, or dosa. Raw mango is called Mamidikayi in Telugu.

INGREDIENTS :

1 tothapuri raw mango

3 tsp oil

Salt to taste

Jaggery for taste

3 tsp red chilli powder

1/2 tsp turmeric/ haldi powder


For the tempering:

4 tsp oil

1 tsp mustard

1/2 tsp hing/ assafoetida powder

2 red chilies cut into bits


Dry roast 2 tsp mustard and 8 to 10 methi/fenugreek seeds and make powder.


PROCEDURE:

  • Peel the raw mango and grate it. Heat one pan and add 3 tsp of oil.

  • Put the grated raw mango in the pan, and cook for 5 to 10 minutes, till it becomes slightly tender.

  • Now add turmeric salt, turmeric powder, chili powder, roasted mustard, methi powder, and jaggery.

  • Cook for another 10 minutes till the jaggery melts and it starts boiling.

  • Turn off the flame and store in a clean jar once it comes to room temperature.

  • Keep refrigerated if you are using it for a long time.

  • Serve with dosa, roti, paratha, or rice.
