Ingredients
1 cup basmati rice wash and soak in water for 20 mins
5 tsp ghee or oil
whole spices like
2 lavang/clove
1/2 inch cinnamon/dalchini
1 bay leaf
1/2 tsp peppercorns
1black cardamom/ badi elaichi
Salt to taste
Ingredients for the masala:
3 chicken leg pieces
3tblsp curds
1 tsp turmeric powder
1 tsp coriander powder
1/2 tsp cumin powder
1/2 tsp pepper powder
2 tsp red chilli powder
1 tsp biryani masala
Salt to taste
Wash and clean the chicken and marinate with the above-mentioned ingredients for minimum of 20 mins
Make a paste of :
5-6 mint leaves
2 green chillies 1/4 cup coriander leaves 5 garlic cloves 1/2 inch ginger 5 tsp oil 2 chopped onions
Procedure
To make rice, heat ghee/oil in a cooker, add whole spices and saute for 2mins
Drain water from rice and add to it and fry for 5 mins
Add salt,1 1/2 cups water, close the lid
Cook for only 2 whistles.
In a pan heat oil, saute onion slices till light brown in colour
Add the masala paste and fry till it loses raw smell
Add marinated chicken and cook till chicken becomes tender
Add little water only if needed
Once the chicken masala becomes dry add the cooked rice, lime juice, and toss well
Garnish with fried cashew, coriander leaves and serve hot with any raita of your choice.
