Appam is a part of Kerala cuisine. This is a type of dosa good for breakfast. Kadala curry or brown chickpeas curry is a very good combo with appam.
Ingredients
for appam:
2 cups dosa rice
1/2 glass coconut water (keep this for 24 hours to ferment before using
1/4 cup coconut milk
1/2 tsp cooking soda
1 tsp sugar
Salt to taste
For Kadala curry :
1 cup soaked and boiled brown chana
3 tsp oil
Salt to taste
For the masala:
In a pan heat 2 tsp oil and roast 1/2 chopped onion,1 tsp coriander seeds,3 garlic cloves,3 tblsp grated coconut, and 4 red chillies till it becomes light brown in colour
Cool it and grind to a smooth paste
Tempering:
2 tsp oil
1 tsp mustard

Procedure
Grind the rice with coconut milk, fermented coconut water to a smooth batter
Take 1 tblsp batter in a bowl and mix with 4 tblsp of water and mix well
Keep it on the gas and cook till it becomes thick and transparent
Cool it and add to the batter and mix
Keep overnight for fermentation
Before making dosa add salt, sugar, cooking soda
Heat appam tava put 1 ladle of the batter in the middle and rotate the tava to spread it
Add 1 tsp oil and cook on a medium flame
When it is cooked serve with kadala curry.
To make curry take boiled chana in a vessel, add salt to taste and ground masala and make it boil
Temper with the ingredients and serve with appam.
