Baingan bharta is a South Asian dish prepared by mincing grilled eggplant and mixing it with tomato, onion, herbs, and spices. Grilling the eggplant over charcoal or direct fire infuses the dish with a smoky flavor.
Ingredients
1 large brinjal / baingan
2 -3 tblsp oil
2 large onions finely chopped
2 tomatoes finely chopped
2 green chillies finely chopped
1/2 inch ginger finely chopped
6 garlic cloves finely chopped
1 tsp red chilli powder
1/2 tsp turmeric powder
2 tsp daniya jeera powder
1 tsp garam masala
Salt to taste
Chopped coriander leaves
Procedure
Wash the brinjal, grease it with little oil and roast it over an open flame till it is cooked
Once it becomes cool, peel the skin, mash the pulp thoroughly and keep aside
Heat oil in a pan, add chopped onions and saute till they turn golden brown
Add ginger , garlic, and green chillies , saute for 2 mins
Add chopped tomatoes and cook till they turn mushy
Add all the spice powders one by one and saute for a few more seconds, till the mixture leaves oil
Add mashed brinjal, garam masala,salt, fry well for 5 mins
Check for the salt and garnish with chopped coriander leaves
Serve hot with hot phulkas.
