Baingan Ka Bharta with Roti

Baingan bharta is a South Asian dish prepared by mincing grilled eggplant and mixing it with tomato, onion, herbs, and spices. Grilling the eggplant over charcoal or direct fire infuses the dish with a smoky flavor.




Ingredients

1 large brinjal / baingan

2 -3 tblsp oil

2 large onions finely chopped

2 tomatoes finely chopped

2 green chillies finely chopped

1/2 inch ginger finely chopped

6 garlic cloves finely chopped

1 tsp red chilli powder

1/2 tsp turmeric powder

2 tsp daniya jeera powder

1 tsp garam masala

Salt to taste

Chopped coriander leaves




Procedure

  • Wash the brinjal, grease it with little oil and roast it over an open flame till it is cooked

  • Once it becomes cool, peel the skin, mash the pulp thoroughly and keep aside

  • Heat oil in a pan, add chopped onions and saute till they turn golden brown

  • Add ginger , garlic, and green chillies , saute for 2 mins

  • Add chopped tomatoes and cook till they turn mushy

  • Add all the spice powders one by one and saute for a few more seconds, till the mixture leaves oil

  • Add mashed brinjal, garam masala,salt, fry well for 5 mins

  • Check for the salt and garnish with chopped coriander leaves

  • Serve hot with hot phulkas.
