Beetroot Palya/ Upkari

Beetroot Palya or poriyal is prepared using beetroot, onion, grated coconut and very minimum spices. This can be used as an accompaniment with rice or chapathi.Some vegetables are naturally tasty and we need not add many ingredients or spices while preparing a dish out of it. Or I would rather say if we add too many spices then we will end up loosing the natural flavor and taste of that particular vegetable. This Beetroot Palya or stir fry is a classic example for this. You need not add much ingredients, it is so simple yet very tasty and healthy.







Ingredients

2 medium-sized beetroots

1 big onion finely sliced

4 tsp oil

1 tsp mustard

1 sprig of curry leaves

4-5 crushed garlic cloves

4 slit green chillies

3 tbsp coconut gratings

Salt to taste




Procedure


  • Wash and peel the outer skin of beetroots, chop into small cubes or juliennes. and cook in cooker, adding 1/2 cup water, a little salt. Cook it for 2-3 whistles.

  • Meantime heat one pan, add oil. Put mustard, once it crackles add curry leaves and garlic clove. Fry till garlic turns brown.

  • Add slit green chillies and saute for 2 minutes. Add sliced onions, a little salt and saute them for 5 minutes or till they turn light brown.

  • Tip in the cooked beet roots, coconut gratings and cook it for 5-10 minutes

  • And your palya is ready to serve.

  • Serve hot with chapati or hot rice and rasam.
