Bengali Begun Bhaja or Baingan Bhaja is a dish prepared out of thick slices of eggplant marinated in spices and coated with rice flour and deep-fried or tawa fried. It goes perfectly with rice and dal and even phulka.
Ingredients
1 large eggplant / baingan/ brinjal
1 tsp turmeric powder/ Haldi
1 tsp red chilli powder
1 tsp lemon juice
2 tbsp rice flour or besan
Salt to taste
Oil for roasting bhaja
Procedure
Wash baingan, cut the stem, and cut into 1/4 inch slices. Apply little salt to the slices, mix well and keep.
Combine chilli powder, turmeric powder, lemon juice, salt, and besan/rice flour in a bowl.
Add little water and make a thick paste. Apply the paste on the slices roll them in rice flour.
Heat tawa and arrange the slices on it. Drizzle them with oil and cook them on both the sides till it turns crisp and golden brown.
Serve baingan bhaja immediately with rice and dal.
