Corn Mint Rice







Ingredients



1 cup basmati rice

2 sliced onions

6 tsp ghee or oil

whole garam masala (clove, cinnamon,bay leaf,cardamom)

1/4 cup sweet corn

2 tbsp chopped mint leaves

2 tsp lime juice

Salt to taste

For the masala:

2-3 green chillies

1/4 cup coriander leaves

1/2 inch ginger

4 garlic cloves

1/2 onion

1/2 tsp turmeric powder

Grind these ingredients into a fine paste and keep them aside.




Procedure

  • In a cooker saute sliced onions and whole garam masala for 5 minutes

  • Add masala and fry well

  • Put corn kernels and rice and fry for 5 minutes

  • Add chopped mint leaves, lime juice, Salt to taste, and 1 1/2 cups water

  • Close the lid and switch off the gas after 2 whistles

  • Add chopped coriander leaves and gently mix with a fork

  • Serve hot with raita.
