Ingredients
15 nos baby potatoes boiled (don't overcook)
3 tsp + 4 tsp oil
1 tsp mustard
8 garlic cloves finely chopped
Chopped coriander leaves
For the masala paste:
In little oil roast 5 red chillies and grind with tamarind,4 garlic cloves, and 1/2 inch ginger into a smooth paste and keep aside.
Procedure
Peel the potatoes and apply salt to taste and keep for 15 mins
In a non-stick pan heat 3 tsp oil, add mustard, once it starts crackling add the potatoes and fry for 5 mins or till the outer cover of potatoes becomes brown
Transfer the potatoes to a bowl and put the remaining oil in the same pan, add the chopped garlic and fry till brown
Add 3 tsp masala paste and fry till the raw smell disappears
Put the roasted potatoes and cook for another 10 mins on a low flame
Garnish with chopped coriander leaves and serve with rice.
