Biscuit rotti is a part of Konkani cuisine which is very popular in Mangalore. This is just like kachori but the masala is different. For a change tried it with adding spinach puree.
Ingredients
For dough:
2 tblsp cup chiroti rava
1/4 cup maida
1/2 cup wheat flour
Salt to taste
3 tsp hot oil
4 tsp palak puree
Knead the dough with the above ingredients with little water into a hard dough
Oil to deep fry
For the filling:
1/4 cup grated finely grated coconut
4 tsp urad dal
4 tsp chiroti rava
4 crushed green chillies
8 curry leaves
1/2 tsp hing powder (assafoetida)
2 tsp oil
Salt to taste
Procedure
In a pan take 2 tsp oil add mustard, curry leaves, green chillies and urad dal
Fry till dal becomes brown
add Rava, hing and grated coconut and fry for 5 minutes
Stuffing is ready
Roll small puris and keep 2 tsp filling mixture in it and close it
Roll it again into thick puris and deep fry into crisp puris
your biscuit rotti is ready to eat
Serve with any chutney if necessary
