Horsegram Rasam/ Kudu Saru / Huruli Saru Recipe is a wholesome recipe of rasam made from horse gram. It is rich in taste and at the same time rich in protein and iron apart and has high antioxidant capacities along with hemagglutinin which is a substance found in antibodies and autoimmune functions.
Ingredients
1/4 cup horse gram/Huruli kaalu
2 tbsp coconut gratings
Gooseberry size tamarind
1 chopped tomato (optional)
Salt to taste
1 tsp jaggery
To roast and grind:
1 tsp coriander /Dhaniya seeds
1/2 tsp Cumin seeds/Jeera
4-5 methi/Fenugreek seeds
2-3 dry red chillies
Few curry leaves
2 tsp Cooking oil
For the tempering:
2 tsp oil
1 tsp mustard
Few curry leaves
5-6 crushed garlic cloves
Procedure
Boil the tomatoes with 1 cup of water, in a vessel.
Roast horse gram till it changes the color and becomes crisp. Transfer it into a bowl.
Put 2 tsp oil in a pan, roast coriander seeds, cumin seeds, fenugreek seeds, and curry leaves. Once it turns golden brown turn off the flame and let it cool.
Once it comes to room temperature, grind it with roasted horse gram, coconut gratings, and tamarind.
Make a fine paste adding water as required. Add this ground paste to the boiled tomatoes. Add 2-3 cups of water and adjust the consistency as per your taste.
Add salt to taste, jaggery, and let it boil for 10 minutes. Turn off the flame.
Heat oil in a pan for tempering, add mustard. Once it crackles, add curry leaves, crushed garlic and fry till the garlic cloves turns golden brown.
Add the tempering to the rasam. Serve hot rasam with hot rice and papad.
