Kantola Stir Fry

Ingredients

4 Kantola/ Phagil

2 potatoes

3 tsp oil

1 tsp mustard

1/2 tsp asafoetida/hing powder

1/4 tsp turmeric/Haldi powder

2 tsp red chilli powder

Salt to taste

Chopped coriander leaves




Procedure


  • Scrape the outer skin of Kantola and cut it into thin wedges

  • Cut the potato into wedges and put both in water

  • Heat the oil in a non-stick pan, add mustard, when it starts crackling, add Hing powder, Haldi and put the Kantola, potato wedges draining the water

  • Cover and cook for 5mins

  • Add salt and 1/2 cup water and cook till both are cooked

  • Finally, sprinkle chilli powder and toss well

  • Garnish with chopped coriander leaves and serve hot with rice or roti.
