Ingredients
For masala paratha:
1 cup wheat flour
Salt to taste
Water to knead the dough
Ghee
For the filling:
In a bowl mix the below ingredients
3 tsp roasted jeera pdr
1 tsp coriander pdr
1/2 tsp haldi pdr
2 tsp red chilli pdr
1 tsp garam masala or chat masala pdr
Pinch of amchur pdr
3 tsp Kasuri methi
Little salt
Chopped coriander leaves
Ingredients for jhatpat aloo:
2 potatoes/ aloo
4 tsp oil
1 tsp ginger garlic paste
1 chopped onion
1 tomato chopped
1 tsp coriander pdr
2 tsp jeera pdr
2 tsp garam masala pdr
1/2 tsp turmeric pdr
2-3 tsp red chilli pdr
Pinch of hing
Salt to taste
Chopped coriander leaves
Procedure
To make the paratha knead the dough and keep covered for 15 mins
Divide the dough into portions and make balls
Roll the balls and put 1 tsp ghee in the middle and spread it
Sprinkle the masala over it and fold the roti, roll it again into a paratha
Heat tava and roast the parathas adding ghee.
To make jhatpat aloo heat oil in cooker add chopped onions and saute till transparent
Add ginger-garlic paste and fry till raw smell goes
Put the tomatoes and fry till it becomes mushy
Add all the spices, fry for a minute, add potatoes cut into cubes, salt to taste, one cup water, and cook for 2 whistles
Once the steam is released, open the lid, check for salt, mix well
Add chopped coriander leaves and serve with parathas
If you want to make the gravy thick add 2 tsp besan after you fry tomatoes.
