Traditionally chitranna rice recipe is prepared from leftover rice with lemon juice and other spices. Lemon juice is added for the tangy taste with the addition of lemon flavour. However, in this recipe, raw tangy mangoes are added in the place of lemon juice and hence the Mavinakayi chitranna recipe. Raw mango is called Mavinkaayi in Kannada.



Ingredients
2 cups cooked rice
2 tbsp oil
1 tsp mustard
1 tsp urad dal
Pinch of hing/asafoetida
3 tbsp groundnuts/peanuts
1 cup grated raw mango
4 slit green chillies
1/2 tsp turmeric powder
2tsp coconut gratings
2 tbsp chopped coriander leaves
Salt to taste
Procedure
Heat oil in a pan, add in 1 tsp mustard, 1 tsp urad dal and 1 tsp chana dal, a pinch of hing and few curry leaves, allow to splutter.
Add in 3 tbsp roasted peanuts and saute for a minute.
Also add in 1 cup raw mango, green chillies and ¼ tsp turmeric.
Saute for a minute or till mango shrinks.
Now add in 2 cups of cooked rice and salt to taste.
Mix gently without breaking rice grains.
Cover and simmer for 2 minutes or till rice absorb flavours.
Add in 2 tbsp coconut and 2 tbsp coriander leaves. mix well.
Finally, serve mango rice or mavinakayi chitranna hot or to the lunch box.
