Aloo Poha is a popular breakfast recipe in Gujarat, Madhya Pradesh, and Maharashtra. It is made using thick flattened rice, boiled potato, and some spices, and is fairly easy to make. But here, for a change, I have added some fresh veggies with potato.
Ingredients
1 cup thick poha / gatti avalakki / beaten rice
4-5 tsp oil
1 tsp mustar1 sprig of curry leaves
1 tsp jeera/ cumin seeds
1 tsp turmeric powder / haldi
2 small onions finely chopped
2-3 slit green chillies
1 potato cut into small slices
1/4 cup chopped carrot
1/4 cup chopped beans
1/4 cup fresh green peas (boiled)
Salt to taste
Pinch of sugar
1/2 slice of lemon
Chopped coriander leaves
Procedure
Take poha in a bowl and rinse 3-4 times, drain water. The poha flakes ideally should soften but remain in shape and intact. If they do not become soft, sprinkle some splashes of water on them so that they absorb some extra water.
Heat oil in a pan, crackle the mustard seeds first, followed by curry leaves, jeera, and green chillies. Saute for some seconds.
Drop in the chopped onions. Saute them until they turn translucent and soften.
Now add all the veggies and cook with a lid covered. Once they are cooked add salt, sugar and give a mix.
Now add the washed poha, lemon juice and salt to taste if needed.
Cook for 5 minutes and garnish with chopped coriander leaves.
Serve hot with hot coffee or tea. You can add some fresh coconut gratings too.
