Rumali roti also called Manda is a thin flatbread originating from the Indian subcontinent, popular in India and in Punjab, Pakistan. These thin soft rotis are thin and can be folded like a handkerchief. Hence the name rumali or roomali roti. The word ‘rumal’ means handkerchief in hindi language.
Ingredients
1/2 cup wheat flour/gehun ka atta
1/2 cup maida/all-purpose flour
3/4 cup milk /water
1/2 tsp salt
2 tbsp oil
Procedure
Put both the flours in a bowl. Add salt and oil, mix well.
Add milk and knead it into a soft and smooth dough.
Spread1 tsp oil on the dough, cover it with a wet cloth and let it rest for 15 minutes.
After 15 minutes divide the dough into portions and make balls.
Take one ball, press it slightly, smear it with oil. Sprinkle a teaspoon of rice flour.
Take another ball and repeat the same. Keep one ball on the other facing the rice flour sides. Press it and roll it as thin as possible.
Heat tawa and cook roti on a medium flame.
Once the roti is cooked remove it from tawa and separate the rotis as shown in the video.
Serve hot rumali roti with any side dish of your choice.
