Sarson Ka Saag With Makki Ki Roti





Ingredients

3 bunches of fresh sarson / mustard leaves

1/2 bunch of palak leaves/ spinach leaves

3 tblsp oil

1 inch ginger chopped

5 garlic cloves chopped

1 big onion sliced

2 finely chopped green chillies

Salt to taste


Ingredients for Makki Ki Roti:


2 cups Maize flour / Makki ka atta

Water to knead the dough

Salt to taste




Procedure

  • Heat oil in a pan and add chopped ginger, garlic, and onion and saute for 3-4 mins

  • Wash and finely chop mustard leaves, palak leaves and add to the pan

  • Add and salt to taste and stir well, let it cook till greens turn soft

  • Once it is cooked well cool and grind to a fine paste

  • Transfer it into a pan and cook for 5 mins and serve hot with roti.

  • To make Roti put the flour in a bowl, add salt to taste, mix well

  • Add water as required and knead a soft dough

  • Add water slowly and gradually, don't pour at once

  • Divide it into portions and make balls

  • Grease 2 plastic sheets, keep the ball on a sheet, drizzle some oil on top of it

  • Fold the plastic sheet over the dough ball, using your hands spread it around making roti

  • Remove the plastic sheet from the top of the roti, carefully lift the roti and transfer it on to hot tava

  • Grease the roti, when cooked from one side flip it over and cook both sides until brown and cooked through. Apply ghee or oil and your roti is ready to eat with sarson ka saag.
