Shahi Aloo Gobi Masala






Ingredients

1 cup cauliflower florets

1 cup potato cut into cubes

2 chopped onions

1 tsp ginger garlic paste

2-3 tsp red chilli powder

1/2 tsp turmeric powder

1 tsp coriander powder

1/2 tsp cumin powder

2 tbsp fresh cream

1/2 cup milk

2 tsp Kasuri methi (dry fenugreek leaves)

Chopped coriander leaves

Salt to taste

Oil to fry + 5 tsp


For the masala:

2 tbsp fresh coconut

2 tsp poppy seeds (khus-khus)

8 cashew nuts soaked in water

Make a fine paste of the above ingredients and keep it aside.




Procedure

  • Wash gobi florets and potato cubes and spread on a kitchen towel for 10 minutes and then deep fry it

  • Keep it on a tissue paper

  • In a Kadai take oil and saute onions chopped till translucent

  • Add ginger-garlic paste and fry

  • Put masala and fry well for 5 minutes

  • add all the spices, milk, and fried gobi, aloo cubes

  • Add salt to taste, fresh cream, and Kasuri methi and stir well

  • Make it boil for 5 minutes and garnish with fresh cream and chopped coriander leaves

  • Serve hot with roti, naan, or paratha.
