Surai Ukde Polo/ Raw rice and Boiled Rice Dosa

This is a famous Konkani styled dosa made using two types of rice. This dosa is popularly known as Surai Ukde polo in the Konkani language. Surai means Raw rice and Ukde means boiled rice also known as red or matta rice. This dosa batter doesn’t need any fermentation but you need to soak rice for around 4 - 5 hours before grinding.




Ingredients


1 cup dosa rice/sona masoori rice

1 cup of Boiled rice/ ukda chaval

1 cup fresh coconut gratings (use white part only)

Salt to taste

Oil for drizzling



Procedure

  • soak both rice in water for 4-5 hours. Wash soaked rice well/

  • Grind rice with coconut gratings and salt. make a little coarse paste. Please do not make a smooth paste.

  • The batter should be of fine Rava consistency. Add water and adjust the batter consistency to pouring consistency.

  • Heat dosa pan, take one ladle of the dosa batter and spread. Drizzle with 1 teaspoon of oil, cook both sides.

  • Serve hot dosa with fresh butter or any spicy curries. It also tastes yummy with coconut jaggery mixture / chooran or jaggery syrup / godda ravo.
