Fish Tawa fry is a very popular restaurant delicacy in Mangalore. This fish fry is served with a spicy sauce known as tawa masala. You can enjoy this with steamed rice and dal or ghee rice. The fish used to make this tawa fry should be a big size with more flesh. You can also use Pomfret/ Maanji and lady's fish / Kaane.
Ingredients
500 gms Kingfish/surmai/Anjal/visonu cut into slices
2 tbsp coconut oil
Curry leaves
5-6 chopped garlic cloves
Chopped coriander leaves
For the masala paste:
10-12 Byadgi dry red chillies
4-5 garlic cloves
10 curry leaves
1/2 tsp coriander seeds/dhaniya
1 tsp cumin seeds/ jeera
1/4 tsp methi/fenugreek seeds
4-5 peppercorns
Chickpea size tamarind
Salt to taste
Procedure
Soak dry red chillies in hot water for 30 minutes. After 30 minutes grind the soaked red chillies with coriander seeds, cumin seeds, methi, peppercorns, garlic curry leaves, tamarind and salt.
Grind to a smooth paste adding only 1/4 cup or less water as needed.
Wash and clean the fish. Take half of the masala and marinate the fish slices with it for one hour.
Reserve the remaining masala for tawa masala.
Heat one non-stick pan with one tbsp coconut oil, shallow fry the marinated fish on low flame for ten minutes on each side.
Remove the fish slices to a plate and keep them aside.
In the same pan add the remaining oil, put chopped garlic and curry leaves, saute for 2-3 minutes.
Add the remaining masala paste and fry on low heat for 5-10 minutes.
Check the salt, add little water and mix well
Place the shallow fried fish slices in the masala, put some masala on the slices and cook for 2-3 minutes on a low flame.
Turn off the flame and garnish with chopped coriander leaves.
Serve hot with dal and steamed rice or ghee rice.
