Uppsaaru Palya


Uppsaaru Palya. Very popular in Southern part of Karnataka like Bangalore, Mysore, Mandya, Hassan, Tumkur, and Kolar region. Upsaaru is a two in one gravy and curry(Sabji) recipe served as an accompaniment with Ragi Mudde/Finger millet balls or with rice. You can use any greens or veggies like cabbage, beans, ridge gourd, etc.





Ingredients

1 bunch leafy veggies like palak, dill leaves, etc

1 cup avarekaalu / hyacinth beans

1/2 cup toor dal

3-4 green chillies

Salt to taste


Ingredients for the gravy or rasam:

1 chopped onion

1 chopped tomato

10 garlic cloves

1/2 gooseberry size tamarind

1/4 cup coconut gratings

1 tsp cumin seeds/ jeera

4 pepper corns

2 tbsp coriander leaves

Salt to taste


Ingredients for tempering rasam:

2 tsp oil

1/2 tsp mustard

5-6 curry leaves

1 red chilli


Ingredients for the curry:

2 tsp oil

1tsp mustard

1 dry red chilli

1 tsp urad dal

1 tsp chana dal

1 chopped onion

2 green chillies

2 tbsp coconut gratings

2 tbsp chopped coriander leaves

Salt to taste



Procedure

  • Wash Toor dal, chop leafy and add avarekaalu/ beans slit green chillies and salt to it.

  • Add 1 cup water and cook it in the cooker for 2-3 whistles.

  • Once it is cooked, take out the green chillies and 2 tbsp of the cooked veggies and dal mixture and keep aside. ( we need this while grinding the masala for rasam)

  • Drain the veggies and lentils stock completely and keep them aside.

  • Heat oil in a pan, add chopped onions, garlic and fry until the raw smell is gone. turn off the flame.

  • Now to grind masala for the rasam, take a tomato, coconut, coriander leaves, cooked green chilli, cooked dal, veggies mixture, cumin seeds, black pepper and tamarind in a blender jar.

  • Add sauteed onion, garlic and grind it into a smooth paste, adding little water.

  • Take a wide pan and prepare to temper using oil, red chilli bits, curry leaves and mustard seeds.

  • Add the ground masala and fry until the raw smell is gone or for 2-3 minutes.

  • add in water as per your desired consistency, adjust salt and bring it to boil.

  • Uppsaaru is ready, close the lid and keep aside.

  • to prepare curry / palya heat oil in a pan, add mustard, urad dal, chana dal, red chilli, green chilli and curry leaves.

  • Add chopped onions and fry until soft. Add in the drained, cooked veggies lentil mixture, mix well.

  • Adjust salt, add in the grated coconut and coriander leaves and toss well.

  • Serve uppsaaru and palya with rice or ragi balls/ ragi mudde and enjoy healthy and tasty food.
