Quesadilla is a Mexican dish made by filling a tortilla (corn or flour) with veggies or chicken and grated cheese, folding it in half and toasting until the cheese is melted. Often served with salsa, guacamole or sour cream.





Ingredients
For the tortilla
1 cup all-purpose flour (maida)
1 cup wheat flour
1/2 tsp salt
1/2 tsp baking powder
1 cup warm water
Mix all these ingredients and make a soft dough and keep covered for 1/2 an hour
For the stuffing:
1/4 cup crumbled paneer
1/4 cup sweetcorn kernels
1/4 cup green and red capsicum chopped
3-4 chopped mushrooms
1/4 cup chopped onion
2 tsp oil
1/2 tsp pepper powder
1 tsp chopped garlic
1 tsp red chilli sauce
Mozzarella cheese
Salt to taste
Procedure
Make big lemon size balls with the dough and roll them into a thick roti
Cook the roti on tava both the sides and keep aside
In a pan heat oil, saute garlic, onion, and all other ingredients (except cheese)
Add salt and mix well
Take one roti, put around 3 tblsp of stuffing on one side of it
Put a generous amount of grated cheese over it and close with the other half part of the roti
Press it and put a hot tava and cook with on both the sides, adding oil
Cut into 2 pieces and serve hot with ketchup
