Ingredients
1/2 cup tender cashew nuts/ bibbo (peeled)
1 potato cut into small cubes
1 cup tendle/ gherkins cut into 4 pieces
Salt to taste
For the masala paste:
In 1/2 tsp oil roast 2 tsp urad dal and 4 red chillies3
Grind roasted dal and chillies with 3/4 cup grated coconut and little tamarind into a semi coarse paste
For the tempering:
4 tsp oil
2 tsp mustard
2 sprigs of curry leaves
Procedure
Cook tender cashews, chopped gherkins, potato with 1/2 cup water in cooker for 2-3 whistles
Transfer the cooked veggies to a pan, add salt to taste, ground masala paste, and water if needed
Make it boil for 5-10 mins and add the tempering with the ingredients mentioned
Mix well and serve hot with rice and dal.
