Bikkanda Humman/ Jackfruit Seed Curry

Jackfruit seeds are called Bikkand in Konkani. This is a typical Konkani delicacy, with a generous amount of hing/ asafoetida and coconut oil. You can substitute bikkand with potato, and seafood lovers can use prawns, tastes wonderful.





Ingredients


1 cup jackfruit seeds

Salt to taste

2 tbsp coconut oil

1 tsp hing / asafoetida pdr


For the masala paste:

1/2 cup coconut gratings

Gooseberry size tamarind

4 red chillies roasted in 1/2 tsp oil

Grind the above ingredients into a fine paste




Procedure


  • Wash and deskin the jackfruit seeds and cut into 4 pieces.

  • Cook it in the cooker with a half cup of water for 2-3 whistles.

  • Put the boiled seeds in a vessel, add the masala hing, water and adjust the consistency of the gravy

  • Make it boil for 5-10 mins, add the coconut oil and turn off the flame

  • Serve hot with rice and dal or dosa idli.
