Biscuit Roti is a popular snack recipe from Mangalore - Udupi region. Serve this crispy puri filled with spicy and delicious stuffing with a cup of hot tea as a tea-time snack.

Ingredients
For the outer covering:
1 cup maida
Salt to taste
Water as needed to knead the dough
3-4 tsp hot oil
For the stuffing:
1 tsp oil
1 tsp mustard
chopped curry leaves
2 tbsp grated coconut
2 tbsp Rava
3 tsp urad dal
1/2 tsp hing/asafoetida pdr
2 chopped green chillies
2-3 tsp sambar powder
Chopped coriander leaves
Salt to taste
1/2 tsp sugar
Oil for deep frying
Procedure
Take maida, salt in a bowl and pour hot oil on it and mix with your fingers
Add water and make a stiff dough and keep covered for 15 mins
In a pan heat oil for the stuffing and add mustard, when it splutters, add curry leaves, green chillies and fry for 3 mins
Add grated coconut followed by Rava, urad dal n hing and fry on a low flame
Now add sambar powder, salt,sugar and mix well
Add chopped coriander leaves, switch off the gas and allow it to cool
you can keep this stuffing in the fridge for 10 - 15 days
Divide the dough into portions and roll each portion into a poori
stuff it with 2 tsp of stuffing,cover it and again roll into a thick poori
Heat oil and deep fry it on a medium flame into crisp pooris
Serve hot with coffee.
