Kaarate Talasani is a simple bitter gourd dish. In Konkani, Kaarate means bitter gourd. This dish is a simple stir fry of bitter gourd which has a garlic seasoning and later on cooked in a tangy- spicy-sweet sauce.
Ingredients
2 bittergourds / karela / hagalkaayi / kaarate
6-8 bimbul / tree sorrel
5 slit green chillies
Salt to taste
Jaggery to taste
For the tempering:
3 tsp oil
6-8 crushed garlic cloves
1 red chilli bits
Procedure
Wash and scrape the outer skin of karela and cut into half, then cut into thin slices
Apply salt and keep aside for 30 mins, squeeze the karela pieces after 30 mins, add chopped bimbul, slit green chillies and cook in cooker with 1/2 cup water for 2 whistles
Heat oil in a pan, add crushed garlic cloves and red chilli, fry till garlic turns brown
Add the cooked karela, salt, jaggery and give one boil
Serve hot with rice.
