Kaarate Talasani/ Bittergourd stir fry

Kaarate Talasani is a simple bitter gourd dish. In Konkani, Kaarate means bitter gourd. This dish is a simple stir fry of bitter gourd which has a garlic seasoning and later on cooked in a tangy- spicy-sweet sauce.


Ingredients


2 bittergourds / karela / hagalkaayi / kaarate

6-8 bimbul / tree sorrel

5 slit green chillies

Salt to taste

Jaggery to taste


For the tempering:

3 tsp oil

6-8 crushed garlic cloves

1 red chilli bits



Procedure

  • Wash and scrape the outer skin of karela and cut into half, then cut into thin slices

  • Apply salt and keep aside for 30 mins, squeeze the karela pieces after 30 mins, add chopped bimbul, slit green chillies and cook in cooker with 1/2 cup water for 2 whistles

  • Heat oil in a pan, add crushed garlic cloves and red chilli, fry till garlic turns brown

  • Add the cooked karela, salt, jaggery and give one boil

  • Serve hot with rice.
