Kalthappa (Sweet appam)

Kalthappam is a North Malabar, especially Kannur, Malappuram and Kasaragod, Kalthappa by Beary Muslims of Mangalore Is a rice cake or delicacy made of ground rice, water, coconut oKalail, jaggery sugar, coconut flakes, cardamom powder.


Ingredients

1 cup dosa rice

1 fistful of cooked rice

1 fistful grated coconut

Jaggery to taste

Pinch of salt

2 tbsp chopped cashew nuts

Pinch of cooking soda



Procedure

  • Soak rice in water for 4-5 hrs, wash and grind with cooked rice and grated coconut into a fine paste

  • Add salt and jaggery and grind again. add nuts and cooking soda

  • Mix well. Heat thick bottomed Kadai put 1 tsp ghee and put one ladle full of batter

  • Cover with a lid and cook on a slow flame

  • Once the bottom is cooked flip it and cook the other side, adding 1 tsp ghee

  • Cook till it becomes crisp. Serve hot with coffee or tea.
