Khamang Kakdi / Cucumber Salad

This is a Maharashtrian term for salad. This cucumber salad or Kakdi chi koshimbir is very popular as it is very refreshing and cooling and can be made very quickly and easily.

Ingredients

1 cucumber/kakdi

2-3 tsp roasted and crushed peanuts

2 tbsp fresh coconut gratings

2 tbsp chopped coriander leaves/dhaniya pattha

Salt to taste

Sugar to taste (pinch)

1 tsp lemon juice


For the tempering:

2 tsp oil

1 tsp mustard

Curry leaves/kadi pattha

1 tsp cumin seeds/ jeera

2 chopped green chillies




Procedure

  • Wash and peel cucumber, cut the ends and chop finely.

  • Add roasted peanut powder, salt, sugar, coconut gratings, lemon juice, and coriander leaves.

  • Mix everything well.

  • Heat oil, add mustard, once it starts crackling add curry leaves, green chillies and jeera.

  • Fry for 2 minutes, add this tadka to the prepared salad and give a mix.

  • And your khamang kakdi is ready to serve. You can have this as a salad or a side dish.
