Mangolian Baby Corn





Ingredients

1 packet baby corn (15 nos)

1/2 cup onion cut into cubes and separate the layers

2 tblsp spring onion greens

1/4 cup capsicum cut into cubes

6 garlic cloves finely chopped

1/2 inch ginger finely chopped

1 tomato

2 green chillies

1 tsp red chilli sauce

2 tsp tomato ketchup

1/2 tsp pepper powder

1/2 tsp red chilli powder

1 tsp vinegar

1 tsp sugar

5 tsp oil + oil for deep frying

salt to taste

chopped coriander leaves for garnishing

2 tsp cornflour mixed with 1/4 cup water


For the batter:

3 tblsp cornflour

1 tsp ginger garlic paste

1/2 tsp pepper pdr

Salt to taste

Mix the above ingredients with little water and make a semi-thick batter



Procedure


  • Wash and cut the corn into 2 pieces and mix with the batter

  • Heat oil and deep fry corn into crisp fritters and keep aside

  • Crush the tomato and green chillies and keep them aside

  • Heat a pan and fry chopped garlic, ginger till light brown

  • add onion chunks and saute till transparent

  • Put the tomato-onion paste and fry for 5 mins

  • Add capsicum cubes Spring onion, salt and saute for 2 mins

  • Add chilli powder, pepper powder,chilli sauce, ketchup, vinegar, sugar and mix well

  • add the cornflour slurry and let it boil till it becomes thick

  • Now put the fried corn fritters, and toss well

  • Garnish with chopped coriander leaves.
