Pathrodo is the King of Konkani cuisine. Pathrode is spicy pinwheels prepared using colocasia leaves. A Konkani cuisine delicacy. Pathrodo are best enjoyed steaming hot with loads of coconut oil on top. Leftover pathrode are turned into lip-smacking dishes again. A yummy side dish for lunch, dinner, also called pathrade upakari in Konkani. It is a simple stir-fried patrado.





Ingredients

1 cup leftover pathrado cut into pieces

5 tsp oil

1 tsp mustard

1 tsp urad dal

2 red chillies

curry leaves

1 onion finely chopped

2 tbsp grated fresh coconut

Salt to taste



Procedure


  • In a pan heat oil, add mustard. When it starts crackling add curry leaves, urad dal and fry till dal turns brown in colour

  • Add red chilli bits and chopped onions and saute for 5 mins or till they turn light brown

  • Now add the pathrade cut into pieces, a little salt and grated coconut

  • Mix well and toss it for 5 mins, serve hot with rice and dal.
