Peri-Peri Vegetable Sandwich




Ingredients


1 loaf sandwich bread

1/2 cup sweet corn kernels

1 carrot grated

1/2 cup finely chopped capsicum

1 sliced onion

3 chopped garlic cloves

1 tsp crushed pepper

2 tsp peri-peri powder

2 boiled potatoes

Salt to taste

1/4 cup mayonnaise

2 tsp Schezuan sauce

2 tsp oil

3 tbsp butter


Procedure


  • Heat oil in a pan, saute chopped garlic, onion slices for a second.

  • Add veggies one by one and saute for 2-3 minutes. Don't overcook the veggies.

  • Turn off the flame, add crushed pepper and peri-peri masala powder, mix well.

  • Peel the potatoes and cut into slices. Marinate with a little salt and chilli powder

  • Roast the potato slices on Tawa till they turn light brown in colour.

  • Mix mayonnaise and Schezuan sauce in a bowl and keep.

  • Take a bread slice and apply 2 tsp mayo sauce on it, keep 2-3 potato slices,2 tbsp veggie mixture.

  • Cover this with another bread slice, applied with mayo sauce.

  • Pan fry and grill the sandwich adding butter on top of the slices, till they turn golden brown in colour.

  • Serve hot with tomato ketchup.
