Potato Drumdtick and Capsicum Butthi






Ingredients



1 capsicum cut into cubes

1 drumstick shaved and cut into 2-inch pieces

2 potatoes cut into fingers

1 onion chopped finely

3 tsp oil

Salt to taste


For the masala paste:

1/2 cup grated coconut

little tamarind

4 red chillies roasted in oil

1 tsp coriander seeds

Grind these into a semi coarse masala paste with little water


For the tempering:

2 tsp oil

1 tsp mustard

curry leaves




Procedure

  • In a broad vessel cook potato and drumsticks with 1/2 cup water, salt and keep aside

  • In a pan heat 3 tsp oil, put chopped onion, and saute till pinkish in color

  • Add capsicum chopped and cook with salt (don't overcook)

  • Add cooked potato drumsticks, masala, salt to taste and cook for 5 more mins

  • Temper with the ingredients and serve hot with roti or rice.
