Ingredients
1 capsicum cut into cubes
1 drumstick shaved and cut into 2-inch pieces
2 potatoes cut into fingers
1 onion chopped finely
3 tsp oil
Salt to taste
For the masala paste:
1/2 cup grated coconut
little tamarind
4 red chillies roasted in oil
1 tsp coriander seeds
Grind these into a semi coarse masala paste with little water
For the tempering:
2 tsp oil
1 tsp mustard
curry leaves
Procedure
In a broad vessel cook potato and drumsticks with 1/2 cup water, salt and keep aside
In a pan heat 3 tsp oil, put chopped onion, and saute till pinkish in color
Add capsicum chopped and cook with salt (don't overcook)
Add cooked potato drumsticks, masala, salt to taste and cook for 5 more mins
Temper with the ingredients and serve hot with roti or rice.
