This is a very simple and easy side dish recipe and will be ready in just 10-15 minutes.Goes well with hot roti,phulkas or naan.
Ingredients
1 cup cauliflower/gobi cut into florets
1/2 capsicum cut into cubes
4 baby corns cut into 1-inch pieces
6 mushrooms cut into quarters
1 carrot chopped1/2 cup green peas
1 small tomato chopped
For the marination:
1/2 tsp turmeric powder/haldi
2 tsp red chilli powder
1 tsp coriander/dhaniya powder
1/2 tsp cumin/jeera powder
1 tsp garam masala powder
1 tbsp Kasuri methi
1/2 cup thick curd
2 tbsp fresh malai/cream
Other ingredients for the tempering:
2 tbsp oil
1 bay leaf
1 chopped onion
1 tsp ginger garlic paste
Procedure
Put all the washed and chopped veggies in a bowl, add the ingredients mentioned for the marination.
Combine everything well and keep aside for 5 minutes. (if you want you can keep it for more time)
Heat cooker put oil. Tip in bay leaf chopped onion and saute for 2 minutes. Add ginger-garlic paste and fry for a minute.
Now add the marinated veggies, salt to taste and give a good mix.
Close the lid and cook for only one whistle.
And your tandoori sabzi is ready to eat.
Open the lid of the cooker and garnish with chopped coriander leaves. Mix well.
Serve hot with roti or phulkas.
You can use other veggies like potatoes, beans or paneer.
