Urad dal and Red boiled rice dosa

INGREDIENTS:

1.5 cups dosa rice

1/4 cup urad dal

1/2 cup thick poha/ beaten rice/ avalakki

One fistful of sabudana / tapioca pearls/ sabbakki

One fistful of red or white boiled rice

1 tsp methi/fenugreek seeds

Salt to taste

Oil for cooking dosa


PROCEDURE:

  • Take rice, dal, poha, sabudana, boiled rice, and methi in a bowl. wash 3 to 4 times well.

  • Soak the above ingredients in enough water for 4 to 5 hrs. If you are using thin poha, then wash it just before grinding and add it to the mixer jar.

  • Drain all the water from the soaked ingredients and grind them into a smooth batter. Keep covered with a lid and let it ferment for 8 to 10 hours.

  • The next morning, add salt to taste and mix well. Add water if necessary and adjust the consistency of the batter.

  • Heat the tawa and make dosa, adding oil or ghee. You can make thick dosa, paper dosa, and tuppa dosa, masala dosa, or paddu with the same batter.

  • Serve dosa with saagu, chutney or sambar.
