Valval is a very popular Konkani dish. This is coconut milk-based curry with lots of veggies, to go with a bowl of rice. Variety of veggies like pumpkin, potato, ash gourd, madras cucumber, gherkins, sweet potato, yard-long beans, ridge gourd, snake gourd, tender cashews are used in this. You can use all of them or just a few of them depending on your availability. The coconut milk makes the curry creamy and tasty.
Ingredients
2 cups veggies cut into cubes
2 slit green chillies
Salt to taste
1.5 cups thick coconut milk
2 tsp rice flour or maida
FOR THE TEMPERING:
2 tsp oil
1 tsp mustard
2 tsp cumin seeds
Curry leaves
Procedure
Cook the veggies with a little salt and 1/2 cup water, cashews and green chillies in the cooker
Cook the pumpkin, ridge gourd outside only, as it cooks very fast
Mix rice flour with the coconut milk ( adding rice flour thickens the curry)
Transfer the cooked veggies to a vessel, add the coconut milk and bring it to boil
Once the coconut milk comes to a boil, simmer it for 3--4 mins and then turn off the flame
Temper with the mentioned ingredients and serve with a bowl of rice
