Vegetable Pulav

Vegetable Pulav is a spicy rice dish prepared by cooking rice with various veggies and spices. In this recipe spices, rice and veggies are are first sauteed in oil and ghee and then cooked in pressure cooker as you would cook plain rice.







Ingredients

1 cup basmati rice

2 sliced onions

2 finely chopped or ground tomatoes

2 tsp ginger garlic paste

1 slit green chilli

1/4 cup green peas

1/4cup chopped carrot

1/4 cup chopped french beans

5-6 gobi florets

5 sliced button mushrooms

1 bay leaf / Tej pattha

1/2 inch cinnamon/dalchini

2 cloves/lavang

2 tsp garam masala powder

1 tsp red chilli powder

1/2 tsp turmeric powder

2 tbsp oil

3 tsp ghee

Salt to taste

chopped coriander leaves




Procedure

  • Wash basmati rice and soak in water for 20 minutes. Drain and keep aside until needed.

  • Heat ghee and oil in cooker,add bay leaf,cinnamon and cloves. Saute for a second, add chopped onions

  • Saute onions till they turn transparent and light brown.

  • Add green chilli,ginger garlic paste and tomatoes,stir fry them for 5 minutes or till they turn mushy.

  • Tip in the chopped veggies,peas and mushrooms with little salt and give a good mix.

  • Now add spice powders one by one and saute for 2 minutes

  • Add the soaked (drained) rice,salt to taste and stir fry for 5 minutes.

  • Add one and half cup of water ,mix well and close the lid of the cooker.

  • Cook over medium flame for two whistles and turn off the flame.

  • In between release the pressure of the cooker once by lifting the weight of the cooker.

  • Once it is cooled open the lid and fluff the rice with a fork and garnish with chopped coriander leaves.

  • Serve hot with raitha of your choice.
