
Ingredients
8 bread slices
1/4 cup corn kernels
1 cup finely chopped spinach
5 finely chopped garlic cloves
2 tsp oil
Salt to taste
2 tblsp butter + 2 tblsp for toasting the sandwich
2 tblsp all-purpose flour/ maida
3 tblsp milk
2 tblsp grated processed cheese
2 tsp chilli flakes
1 tsp mixed herbs or oregano
Procedure
In a pan heat oil and saute chopped garlic, corn and spinach with salt to taste,till spinach is cooked
Transfer it in a bowl and put 2 tblsp butter and when it melts add maida and fry for 3 mins
add milk and stir continuously till it becomes thick
add grated cheese and mix well
Add corn, spinach mixture, dried herbs,chilli flakes, and salt if needed and toss well
Take a bread slice and spread the mixture over it and cover with the other slice and press lightly
Heat tava and toast the sandwich adding butter on both the sides
Serve hot with tomato ketchup.
