Ingredients
2 cup bombay rava / semolina
2-3 green chillies
5-6 curry leaves
1 tsp grated ginger
3 tsp oil
1 tsp mustard seeds
2 tsp bengalgram dal/ chana dal
1/4 cup boiled green peas
Chopped coriander leaves
1/2 cup Cashew nuts
4 cups curds
2 tsp ENO fruit salt
Salt to taste
Procedure
Heat oil in a pan and temper mustard seeds, Bengal gram dal, chopped curry leaves, green chilies,ginger, and fry for 3-4 mins
Add Rava and roast on a low flame till a nice aroma comes and remove from the flame
When it comes to room temperature add 2 cups of curds, salt to taste and mix well
After 5 mins add the remaining 2 cus curds, boiled green peas, cashew nuts, coriander leaves, and mix
If the batter is too thick add some more curd(don't add water)
Grease the idli mould with oil
Heat the steamer and keep ready
Quickly add the ENO fruit salt to the batter and mix properly
Pour the batter in greased moulds and steam for 20-25 mins
Don't overfill the molds as they may rise a bit
Serve hot idlis with chutney, sambar, or vegetable saagu.
