Sukke is a typical Konkani side dish for rice. this is a semi-solid coconut-based curry with veggies. you can use other veggies like potato, cauliflower, beans, yam, or all mixed veggies too. Tastes awesome with hot rice and dal!! Here I've used Magge means Madras cucumber and Phagil means Kantola.
Ingredients
1 cup madras cucumber cut into cubes(boiled)
1 cup phagil cut into cubes(boiled)
Salt to taste
For the masala :
Roast 3 tsp urad dal and 4 red chillies in 1/2 tsp oil and grind with 1 1/2 cups grated fresh coconut and little tamarind. don't make a very fine paste, keep a little coarse.
For the tempering:
3 tsp oil
2 tsp mustard
1 sprig of curry leaf
3 methi seeds
Procedure
Boil the magge and phagil cubes in cooker for 2 whistles(don't overcook)
Add salt, ground masala and 1/2 cup water
Make it boil for 10 mins and add the tempering
Serve hot with white rice and dal.
