This is a thin spiced and tasty curry made with potatoes and famous in Mathura – one of the holy cities in the northern part of India, in Uttar Pradesh. This is so easy to make and you just need some spices and potatoes. The curry is thin and no onions, tomatoes, or garlic are used. The addition of the spices gives a lot of flavor and taste to the curry. Mathura ke dubki wale aloo is best had with pooris or luchi or kachori.
Ingredients
2 boiled potatoes, cut into cubes
4 tsp oil
1 tsp jeera/ cumin seeds
1 finely chopped green chilli
1/2 inch ginger grated
1/2 tsp turmeric / haldi pdr
2 tsp red chilli pdr
1 tsp garam masala pdr
1 finely chopped tomato / dry mango pdr
Pinch of hing/ asafoetida pdr
Salt to taste
Chopped coriander leaves
Procedure
In a pan put oil, add jeera,hing,haldi, green chillies and fry for 2 mins
Add the chopped tomatoes and fry till they become pulpy
Put all the spice powders, salt and saute for a minute, add 2 cups of water
Mash some potato pieces, add the potato cubes, mashed potato into the pan and make it boil for 5 mins
Garnish with chopped coriander leaves
Serve hot with pooris,phulkas, or kachoris.
