Mixed Veggie Upkari

Ingredients


1/2 cup finely chopped cabbage

1/2 cup finely chopped carrot

1/2 cup finely chopped capsicum

1/2 cup finely chopped potato

1/2 cup finely chopped chow chow/ seemebadane

1/2 cup finely chopped tendle/ gerkins

5 tsp oil

2 tsp mustard

1 tsp urad dal

4 slit green chillies

Salt to grated coconut



Procedure


  • Heat oil in a pan, add mustard, once it starts crackling add chillies, urad dal and fry

  • Add chopped and washed veggies(drain all the water)

  • Add salt to taste, sprinkle little water and close with a tight lid

  • Cook until the veggies are cooked, add grated coconut and toss well

  • Serve hot with rice and dal.
